As 2026 enters its final quarter, Hyatt Hotels Corporation (NYSE: H) is highlighting a concentrated period of growth across its luxury portfolio in the Americas, led by the expansion of the Park Hyatt portfolio in Mexico and a series of distinctive additions to The Unbound Collection by Hyatt.
From the Pacific coast of Baja California Sur to Mexico’s Caribbean coastline and the dynamic capital city of Mexico City, the Park Hyatt brand is building a three-property story across the country – with Park Hyatt Cabo del Sol, which opened its doors last December, and the upcoming openings of Park Hyatt Riviera Maya and Park Hyatt Mexico City Polanco. Meanwhile, properties such as The Clayfield in the heart of Niagara-on-the-Lake are expanding The Unbound Collection by Hyatt portfolio in the Americas, while the luxury all-inclusive resort Impression Isla Mujeres is set to join the collection in November. Together, these openings and brand milestones reflect Hyatt’s considered approach to luxury growth: expanding its reach while giving each brand and property a separate point of view.

Park Hyatt in Mexico: Three Expressions Across a Vibrant Country
Park Hyatt Cabo del Sol opened in December 2025 as the brand’s first Mexican hotel. Set on the coast of Baja California Sur, every room has views of how the property brings the Park Hyatt brand’s residential sensibility to Baja through contemporary Mexican architecture, oceanfront dining, and a wellness offering shaped by the surrounding landscape.
Expected to open by the end of 2026, Park Hyatt Riviera Maya will be the world’s first all-inclusive Park Hyatt hotel. Located on a secluded stretch of Mexico’s Caribbean coastline, the resort will offer a new interpretation of the all-inclusive experience – one shaped by choice, discretion and the art of thoughtful hosting. From personalized pre-arrival planning to entirely à la carte dining, every detail is designed to give guests the freedom to settle into Riviera Maya on their own terms.
Park Hyatt Mexico City Polanco is expected to welcome its first guests in spring 2027. Located on Campos Elíseos in Polanco, the 155-room-and-suite hotel will overlook Chapultepec Park, with Mexican art, design, and cuisine shaping its interiors and culinary offering.
Together, Cabo del Sol, Riviera Maya and Mexico City Polanco will give travelers three distinct ways to experience Mexico through the Park Hyatt lens –from the Pacific coast and Caribbean shoreline to the cultural heart of the capital. Each property will offer a sense of place shaped by its setting, allowing guests to pair a stay in Mexico City with time on either coast while enjoying the thoughtful service and considered Park Hyatt experiences.
The Unbound Collection by Hyatt Expands with Independent Character
Across the Americas, The Unbound Collection by Hyatt continues to grow through independent properties defined by distinctive architecture, history and service.
The Clayfield, Hyatt’s new wine-country retreat in Niagara-on-the-Lake, Ontario, draws on the region’s clay-rich soil and surrounding vineyards for inspiration. Warm earth tones, natural materials and tactile finishes give the property a contemporary expression rooted in the character of Niagara’s wine country.
On November 2, Impression Isla Mujeres will transition into The Unbound Collection by Hyatt. The adults-only, all-inclusive resort will bring its suite-led accommodations, butler service and highly personalized hospitality into a collection known for independent character and differing narratives.
This year, The Unbound Collection by Hyatt will launch an experiences initiative that will celebrate rare, curated, and locally rooted experiences that bring each hotel’s story and destination to life. From private culinary and wine experiences to behind-the-scenes access to local culture, artists and makers, the program is designed to create one-of-a-kind moments guests could not simply book elsewhere. The Georgian, Hotel La Compañía Casco Antiguo, and Impression Isla Mujeres are among the properties set to offer an enriched experience program, translating design, culinary heritage, history, and cultural encounters into memorable, highly personalized experiences.
Alila Extends its Americas Story from California to Mayakoba
The Alila portfolio in the Americas includes Alila Ventana Big Sur, Alila Napa Valley, Alila Marea Beach Resort Encinitas, and Alila Mayakoba, which joined the portfolio in February 2026. Located in Riviera Maya’s Mayakoba, Alila Mayakoba features 182 guestrooms, suites, and villas, six dining destinations, and Alila Spa, with design rooted in the surrounding landscape and local craftsmanship. Beginning October 1, all four properties will join Erewhon’s Member Lifestyle Collective, connecting the brand with its wellness-focused membership base.
Grand Hyatt Extends Growth Across the Americas
The Grand Hyatt brand is also expanding across Latin America and the Caribbean, with Grand Hyatt Grand Cayman, Grand Hyatt Cancun, and Grand Hyatt Los Cabos all slated to open in Q4 2026. The new resorts will expand Grand Hyatt’s presence in key leisure destinations, with Cancún and Los Cabos introducing all-inclusive offerings to the brand’s Americas portfolio.
