The Evolv Collection Opens First Tavern Concept in New York

The Evolv Collection opens Queens Tavern at Hudson Yards. Queens Tavern is the first international outpost of The Evolv Collection’s Chop House & Tavern brand and brings “a distinctly British conviviality to the heart of Manhattan.”

Born in the City of London, the concept draws inspiration from the “historic trade guilds, livery companies and city taverns that defined London’s Square Mile for centuries,” bringing that heritage to New York through traditional tavern culture, elevated comfort fare, and classic British beverages.

Highlights from the opening include:

  • A curated beverage program featuring Guinness served in traditional tankards, Magners Cider, BrewDog Elvis Juice, and signature cocktails including the “Queens Garden Highball,” “Hudson Sour,” and “Tavern Summer Cup”.
  • Tavern bites and Chop House classics, including Scotch Eggs with piccalilli, Welsh Rarebit, Sausage Rolls, Pork Pie, Potted Shrimps, and the Chop Chop Burger.
  • Interiors inspired by Sir Terence Conran’s original design philosophy, with dark-stained wood, brass detailing, patterned tiled floors, globe pendant lighting, antique prints, and stained-glass-effect accents.

The design of Queens Tavern draws on Sir Terence Conran's original design philosophy, honoring the visual language of 17th and 18th-century London. The existing space has been transformed with a new traditional tavern bar and back bar in dark-stained wood with panel detailing, complemented by a brass bar rail, patterned tiled floors, and globe pendant lighting. The color palette runs deep red, navy, and gold throughout, seen in the branded canvas terrace panels with brass posts and stained-glass effect window vinyls bearing the Queens Tavern and 'Born in the City of London' branding. Walls are dressed with antique prints, nautical and historical flags, and gilt-framed mirrors with gold script, all consistent with the brand's established look across its London taverns.  

At 1,000 sq ft, the space covers an indoor bar and terrace, accommodating 50 covers for dining and up to 100 guests for private hire. True to tavern culture, Queens Tavern is walk-in only and does not take reservations.

Queens Tavern is the third New York venue for The Evolv Collection, joining queensyard and Guastavinos, and the fifth venue in the growing Tavern family alongside Liverpool Street Chop House & Tavern, Butlers Wharf Chop House & Tavern, Paternoster Chop House & Tavern in London, and Stories Tavern in Birmingham, UK. It underscores the group's continued international expansion and its commitment to scaling heritage-rich, design-forward British hospitality across the world's leading culinary capitals.
