Foxglove Communications Announces Representation of The Maker Hotel and Its Concepts SERRE, The Maker Lounge, The Maker Café

Foxglove Communications is thrilled to share it is working with The Maker Hotel, a boutique hotel in Hudson, NY, from the co-founders of global beauty sensation Fresh, and its vibrant F&B concepts: The Maker Café, The Maker Lounge, and SERRE, a brand-new restaurant from recently-appointed Executive Chef Jonas Offenbach.

SERRE, led by Executive Chef Jonas Offenbach, is an ode to classical French technique reimagined through a modern lens and guided by seasonality. SERRE is named after the dining room itself – a glass-encased conservatory layered with greenery, natural light, openness, and a sense of calm. Derived from the French word for “greenhouse,” SERRE is set in the same iconic setting that The Maker is known for, now with a new unforgettable dining experience where refined, seasonal cooking unfolds in an atmosphere that is vibrant and inviting.

Food

SERRE reflects The Maker’s spirit of craftsmanship and artistry, with Chef Jonas bringing a nuanced, modern approach to dishes rooted in classic French cuisine. Drawing on experience at Michelin-starred kitchens including Contra, Gramercy Tavern, and Momofuku Ko, he highlights pristine, seasonal ingredients through time-honored techniques, from careful reductions to delicate sauces. The evolving menu emphasizes clarity of flavor and thoughtful composition, resulting in light, balanced, and refined dishes that feel both approachable and creatively driven.

“In French, serre means greenhouse: a place where growth is guided with care, patience, and intention,” said Executive Chef Jonas Offenbach . “Lightness is a principle at SERRE, where food, space, and people come together to create something alive, evolving and enduring. The cooking is French cuisine through a modern lens, grounded in an atmosphere that feels warm, inviting, and reflective of the creative spirit of the Hudson Valley.”

In addition to SERRE, Chef Jonas has launched a new menu at The Maker Café and The Maker Lounge. The Café serves as a community gathering space, offering a daytime menu guided by the same seasonal approach and inspired by modern French cuisine, including baked goods from Bartlett House, an artisanal bakery also founded by Lev Glazman and Alina Roytberg.

Highlights include:

  • Soft scramble with two eggs, crème fraîche, fines herbes, toasted sourdough, and a lightly dressed green salad.
  • Coq Au Vin Pot Pie with red wine braised chicken, lardons, mushrooms, potatoes, and puff pastry.
  • Smoked Salmon Tartine with pastrami smoked salmon, capers, pickled red onions, dill, and crème fraîche

The Maker Lounge introduces a newly refreshed food menu that reflects elements of SERRE’s cuisine in a more relaxed, and shareable format, and a beverage menu that includes The Maker’s signature Fragrance Cocktails – drinks inspired by the brand’s own fragrance collection – helmed by Food & Beverage Director Pia Bazzani.

Highlights include:

  • Jambon de Bayonne with picholine olives and preserved lemon.
  • Escargot Toast with smoked speck and spinach.
  • Japanese Jack Fish, toasted brioche, dried herb tartar sauce.

Together, these spaces extend The Maker’s culinary vision of offering inviting day-to-night destinations for the local community and visiting guests alike.

Beverage

The beverage program at SERRE is rooted in respect for the makers behind each bottle, highlighting expressive, place-driven producers. Led by Food & Beverage Director Pia Bazzani, the wine list and beverage menu evolve alongside the kitchen, with by-the-glass selections designed to complement each course and encourage exploration. The cocktail program draws inspiration from literature and the seasons, with a particular focus on refined martinis, alongside a range of libations, select beers, and spirit-free options for a dynamic and inclusive experience.

Design

The 14,000 square-foot hotel is comprised of three buildings: an 1800’s Carriage House, a Georgian mansion, and a Greek Revival building. Before the hotel opened in 2020, a conservatory was built to connect the three historic buildings and integrate the spaces. The greenhouse, which is now home to Serre, is bordered by glass-ceiling windows, enveloped in layers of greenery. Jewel-toned tapestry upholstery brings colour and pattern into the light-filled space. The conservatory leads outside to a central lush courtyard and a tempting azure-blue swimming pool. When first designing the conservatory, Lev Glazman & Alina Roytberg drew inspiration from the grand conservatories of Europe. The space is richly layered with antiques, restored objects, an ethereal burlap mural by Michael Allen, and bespoke pieces by Gary Keegan.
