Wölffer Estate is excited to announce a fresh and extremely limited collaboration with Brooklyn-based brewery Threes Brewing on Original Copy, a Rosé Style Saison aged in Wölffer Wine Barrels with Wölffer Estate Grapes. The total production is 14 barrels, which is approximately 196 cases!
Wölffer Estate Vineyard, located in the heart of the Hamptons, has 55 acres of scenic vines and is 2.5 miles from the ocean in Sagaponack, NY. Having created exceptional products, the brand was thrilled to collaborate with Threes Brewing on an exciting new project, blending Wölffer's expertise and resources.
Original Copy was modeled after the profile of Wölffer Estate's Summer in a Bottle Rosé and showcases a similar color, flavor profile, and general vibe. As far as beer goes, this one has a particular elegance and refinement, paying homage to the crisp and refreshing characteristics of the iconic Rosé.
The beer itself started as a small and simple Saison hopped with Nelson Sauvin that would lay down a neutral base beer in which the Grapes, Wine Barrels, and House culture speak through. It spent about a month in the fermenter to allow the base beer to clean up and allow the yeast to drop out. From there, the batch was inoculated with Wölffer Estate's house culture, contributing a gentle acidity and fruity Brett Character that developed over the course of a few months.
The beer was sent into 4 x freshly emptied Wölffer Red Wine Barrels with grapes and a stainless holding tank in which they spent the next 2-3 months of their life maturing and conditioning. The split into Oak and Stainless steel allowed the components to develop at different rates and was then blended back together once the flavors matured and developed into the desired taste.
On the packaging day, Wölffer Estate primed the beer with a small dose of fresh yeast and sugar to allow for can and keg conditioning, which helps tremendously with increasing carbonation levels, decreasing oxidation in the package, and prolonging shelf life on a beer that the brand has spent so much time and effort creating.
Overall, Original Copy presents with a soft pink hue, a delicate acidity and minerality, light tannic structure, and a delightfully refined and fruity aroma paralleling note of a fine Rosé.
